Quick and easy Eggplant Parmesan

Slice an eggplant, add some salt and let it drain awhile, dip it in egg white, dip that in seasoned bread crumbs, put on some actual grated parmesano reggiano, and bake instead of fry it.

Make real tomato sauce yourself quickly; find some actual back yard tomatoes, just cook them down with some fresh basil (looks and smells good in a in the flower bed). Add to whole wheat pasta, which you can buy in bulk.

Total you’re talking 15 minutes hands-on time, tops, and maybe a dollar a serving. If you grow the vegetables yourself there’s almost no cost to it.
